Fettuccine in a Lemon Cream Vodka Sauce

Fettuccine Limone e Crema         Makes four servings

 Fettuccine in a Lemon cream vodka sauce

1 Lbs Da Sesto fresh fettuccine pasta

12 oz whipping cream

1 Lemon  (wash well to remove pesticides)      Grate lemon zest and juice the lemon

2 Tbs butter

¼ cup vodka


Fresh ground pepper

½ cup grated Parmiggiano Reggiano


Boil plenty on salted water and cook the fresh fettuccine for 2 to 3 minutes. Remove from water. Keep pasta water.

Melt the butter in a pan at medium heat and add the lemon zest. Once lemon zest begins to become golden add the vodka and flambe (light the vodka on fire). Once flame dies down add the lemon juice, cream, salt and pepper. Once pasta is cooked add to the pan and let simmer for 2 minutes. If needed add the some of the pasta cooking water to create sufficient sauce. Add the parmesan cheese, toss and serve.

Angel Hair Pasta With a Cherry Tomato and Prosciutto Sauce

Angel hair pasta in a fresh cherry tomato and prosciutto sauce

Quick and easy! Dinner for two.


4 cups cherry tomatoes

¼ cu Extra virgin olive oil

2 garlic cloves

4 green onions

A few leaves of fresh basil (Dry will do)

4 oz fresh mozzarella cut in cubes

Salt and pepper

Crushed chili (to taste)

¾ Lbs Da Sesto Fresh Angel Hair Pasta

2 slices of prosciutto cut into strips



Wash and cut the cherry tomatoes in half.

Slice garlic and green onions and sauté in the olive oil until garlic is golden brown. Add the prosciutto and the cherry tomatoes and basil and allow the tomatoes to cook until they soften and season to taste.


Boil the Angel hair for 2 minutes. Drain and fold into the sauce adding the fresh mozzarella and cook for 2 minutes more.


You can vary this sauce my adding different ingredients ie. Chili flake, sausage, ham, peas.

Penne with Butternut Squash, Prosciutto and Cherry Tomato Sauce


This is a great recipe for the fall season!

Butternut Squash, Prosciutto and Cherry Tomato Sauce

Recipe for Four

½ Cup Extra Virgin Olive Oil

1/2 Cup Diced Spanish Onions

1/2 Cup Dice Celery

1 Tsp. Rosemary (Preferably Fresh)

2 Cups Butter Nut Squash, Peeled and diced medium size.

2 Cups Cherry Tomatoes

¼ Cup fresh Parsley

1 Lbs. Da Sesto Fresh Penne. Cooked to taste.  (You can use 1/2 Lbs. of dry)

¼ cup Prosciutto Thickly sliced and chopped.

¼ Parmesan Cheese Shredded

½ Cup Water

Salt and Pepper to Taste

Recipe for Katia's Lemon Cookies

Growing up there many recipes that I would help my mother prepare and be even more eager to eat. My daughter Katia loved to be by my moms side when she prepared these cookies to help her put on the frosting all while liking her fingers full of frosting!!
